Grilled Flank Steak with Gorgonzola Cream Sauce
Okay...this is totally one of my favorite recipes. I love the sauce...it's just so...cheesy. I found this somewhere on the Food Network when I was looking for recipes for Christmas dinner. (This isn't exactly where I found it, but it's similar.) I am so enamored with this dish. I could eat it right now.
It's relatively inexpensive to make and not too difficult...as long as you can find a shallot and some gorgonzola in your grocery story. A little fun fact for those of you who don't know what the crap a shallot is...it's basically a cross between an onion and garlic. I was scared at first, but they're actually quite good. They have a more buttery flavor than onion, but they still keep the tang of the garlic.
Here's what you'll need :
1 tbsp. salted butter
1 shallot, minced
1 cup heavy cream
1/4 lb. gorgonzola cheese, crumbled
Kosher salt and ground pepper
1 1/2 lb. flank steak
1 tbsp. olive oil
The directions are pretty straight forward. I do mine on a grill, but you could just as easily broil the steak.
Preheat grill on medium. (Or preheat your broiler.)
Melt 1 tbsp butter in a medium saucepan over medium heat. Add the shallot and cook until tender, about 1 minute. (It smells delicious, but your hands will not...for about three days.) Add the heavy cream and simmer until reduced by half. Whisk in the gorgonzola until it melts. (This will only take a minute or two, so stay close and keep stirring.) Season with salt and pepper and keep warm.
Brush the steak lightly with olive oil and season liberally with salt and pepper. Grill the steak 4-5 minutes on each side for medium rare, turning once. Remove from the heat and allow the steak to rest for 5 minutes before slicing.
Cut the steak into 1" thick slices. Top with the gorgonzola cream sauce.
This meal totally makes me feel fancy. Doesn't it look fancy? And it only takes about 20 minutes to make. Awesome, right?!
