A Rainy Sunday Summary

Another week has flown by. It seems like the weeks at our house keep moving faster and faster. Collin is super busy with work and Darian is having project after project at school. Yay for 4th grade...

I had a short work week which was a very good thing. Thursday was a rough day for me and it would've been worse if I would have had to work. Last night we were able to spend some time with Collin's mom while she was in town and we all got together to watch the BSU game. It was nice to see her and we all enjoyed watching the Broncos step all over CSU. We also got to have a date night with Owen & Patti and enjoyed some delicious pizza over at Flatbread Community Oven.

Today I'm spending my rainy Sunday running a grid for the EMT National Registry Exam at Collin's office. Nothing like having to get up at 6am on Sunday morning. Good times. We have a slew of people here...some who are patient and some who are pushing my buttons. Nature of the beast. I can count on at least one troublemaker every time. But we're almost done and then I get some lunch afterwards so I guess I can hold out a little longer.

Recipes I Tried: Though it's definitely not a new recipe, I figured I needed to share this one. On Monday, I made Sicilian Supper...a recipe I've eaten since I was a kid and a VERY easy dinner. I use it on nights when I pretty much don't feel like doing anything. So for those nights where you need a break or when you want to have your preteen help with dinner, this is a great option.

Okay...it's not the prettiest, but I  promise it tastes good.

Ingredients :

1 lb. ground beef
1 green bell pepper
1/2 c. onion, chopped (I substitute 1 tbsp. onion powder since my stomach doesn't tolerate onions well.)
1 box of cream cheese
1 8 oz. can of tomato paste
2-3 cups of uncooked egg noodles (I typically lean towards three.)
1/2 c. milk
1/2 c. hot water
1 tsp. pepper
1/4 tsp. garlic salt
1/4 c. parmesan cheese

Cook the egg noodles according to the instructions on the package. Set aside. Place the ground beef, bell pepper and onion in a medium sized casserole dish. Microwave for 5-7 minutes, until the beef loses it's pink, stirring once to break up the meat. Add all remaining ingredients except for the parmesan. Microwave for 2 minutes. Sprinkle parmesan over the top. Microwave for 5-7 more minutes. Allow to sit for 5 minutes before serving.

I told you! Super easy! I love that I don't even have to turn on the stove. My family loves it and there are very rarely leftovers.

Books I Finished : I finished reading One Day by David Nicholls. I started reading Her Fearful Symmetry by...wait for it...Audrey Niffenegger!!! She's back people! And I'm super excited. Not only do I love using her name, I love this book already. I think it's going to do very well in competition.

Projects I Finished : Ouch. Ya...so I haven't accomplished squat with regards to projects. Maybe I'll do better next week.

Posts I Posted : I talked about my love for Pinterest, bragged about my Wal-Mart ban, divulged a deep, dark secret, and told you why holiday pies now make me nervous. Whew. That was a busy week.

Favorite Post of the Week : So I've been checking out the MS Paint stylings over at Reading (and chickens). She has a hysterical post on IKEA and another talking about beard identification. I laughed.

The Best Thing I Found on the Interwebs : I saw a commercial for this product on TV this week and nearly choked on my breakfast. So...I knew I needed to share it. Here...it all its glory...is...the FOREVER LAZY.

  2. I'll be posting a complete review of it during one of my 52 Books posts, but I gave it 3 stars out of 5. It came highly recommended by a friend, but I admit that I was disappointed.
