Toasted Sesame Ginger Salmon

Having a meal plan doesn't mean that we have to eat boring things all the time. In fact, part of the agreement for undertaking this task was that I promised Collin at least one meal a week that is "fancy". Basically...fancy means that some type of meat other than ground beef is used, but I tried to gussy it up now and then to keep things from getting boring.

This Toasted Sesame Ginger Salmon recipe that I found on Pinterest turned out crazy good. I was really leery to cook such a large piece of fish, but I totally rocked it. It's actually amazingly easy to make. Plus, I'm pretty sure it would be difficult to mess it up. Yay for simple!

Salmon :

2 lb. fresh salmon
1/4 cup olive oil
2 tbsp. sesame oil
2 tbsp brown sugar
2 tbsp. soy sauce
2 garlic cloves, grated
1 tbsp fresh ginger
Salt & pepper to taste
1-2 tbsp sesame seeds
4 green onions, sliced

Glaze :

1/4 c. honey
1 tsp. sesame oil
1 tsp. soy sauce
1/8 tsp. ginger
1/2 tsp sesame seeds

Combine olive oil, sesame oil, soy sauce, garlic, ginger, vinegar, and brown sugar. Whisk well until comined. Place everything in a Ziploc bag. Refrigerate and marinate for 30 min. We didn't have a Ziploc bag so I just poured the marinade over the salmon in the styrofoam it came in. I covered it with tinfoil and popped it in the fridge. Worked just fine.

Preheat broiler. Line baking sheet with aluminum foil and place wire rack over top. Spray rack with nonstick spray. Place salmon directly on wire rack. Sprinkle with salt and pepper. Place directly under broiler.

Cook 12-15 minutes until opaque and easily flakable with a fork.

Prepare glaze by combining all glaze ingredients and whisking until smooth.

Remove salmon and serve immediately. Top with glaze and a sprinkling of toasted sesame seeds and green onions.

See. I told you. Easy. We all know that I am all about the easy. This recipe definitely stays in the repertoire.

  2. I've made this recipe numerous times and my family loves it. I substitute the salmon with chicken breast for my brother-in-law and it's fantastic. This is one of those dishes that you can prepare and store in freezer for rainy days.
