Crockpot Creations: Chicken Caesar Sandwiches

I am all about the CrockPot. Seriously. I love it. If it weren't for the fact that I would have to wash it constantly, I might consider using it every day for every meal. It makes things so much easier. I'm always stoked when I find a good CrockPot recipe.

I made sure to add plenty of CrockPot meals into my meal plan for this quarter. In fact, we're slated to eat almost twenty slow cooker meals between now and October. Some are new and some are old. I'm sure that some may disappoint. However...there are always those that knock your socks off.

This recipe. Ya...this recipe is one of the good ones.


Anyone who has been reading this blog knows that I'm a huge Pinterest troller. It's one of my favorite tools. I'm on there all the time finding neat projects, good ideas and amazing recipes. I have only one rule for the recipes I pin: they must be fairly simple to make. I don't do well at spending hours in the kitchen. I'm not that patient.

So when I found Chef-In-Training's recipe for Crockpot Chicken Caesar Sandwiches I was psyched. Easy, easy, easy.

Ready? Here we go...

Chicken Caesar Sandwiches

2 lb. boneless, skinless chicken breasts
1/2-1 c. Caesar dressing (I used a full cup of Newman's Own)
1/2 c. Parmesan cheese
2 tsp. dried parsley
1/2 tsp. pepper
2 c. shredded lettuce
Hamburger buns

Place chicken in the CrockPot with 1-2 c. of water depending on the size of your CrockPot. Cook on low for 4-6 hours. Remove the chicken and drain the water. On a cutting board, shred the chicken with a fork. Discard any fat and then place the shredded chicken back in the cooker. Add dressing, cheese, parsley and pepper. Mix evenly. Cook on high for 30 min.

That's it! Serve it on your hamburger buns topped with lettuce and some extra Parmesan. Yum yum. The only upgrade? Next time I think I may add some tomato.


I found that this makes quite a bit so we had a good portion left over. I popped it in the freezer and we'll be reheating it later in the fall for a rebound recipe. I'm excited!

  1. That does sound good (especially with the addition of tomato). Do you eat it hot or chilled?

    1. We ate it both ways. I think it tasted equally good either hot or cold. I think Darian preferred it hot.
